Crab Salad with Coriander Dressing


  • ½ lb. crab meat, picked free of shells
  • 6 cups romaine lettuce, chopped
  • 1 cucumber, diced
  • 3 green onions, chopped

For Coriander Dressing

  • ½ bunch of fresh coriander, chopped
  • 2″ fresh lemon grass stalk, peeled of the dry outer husk and chopped
  • 1 tablespoon fish sauce
  • 1 teaspoon soy sauce, tamari or coconut aminos
  • 3 tablespoons sesame or other mild tasting oil
  • Juice and zest of half a lime


In a large bowl place the crab meat, romaine lettuce, diced cucumber and green onions. Chop the coriander and lemon grass as finely as possible and add to a small bowl. Mix with the other dressing ingredients, cover and leave in the fridge until it’s time to spoon over your salad.
