Chipotle Chicken Bites


  • 1 ½ lbs. boneless, skinless chicken breast, shredded
  • 1 tablespoon paprika
  • 1 ½ teaspoon sea salt
  • ½ teaspoon chipotle
  • 2 teaspoons olive oil
  • 1 lb. bag sweet mini peppers


Cook the chicken, paprika, sea salt, chipotle and olive oil in a skillet over medium heat for about 7 minutes and set aside. Slice the peppers in half. Remove the insides and seeds with a small spoon.

Put a few pieces of the chicken into each pepper. Heat in oven until warm and serve.
