Cucumber, Onion and Tomato Salad
Ingredients
- 3 cucumbers, peeled and sliced
- 3 medium sized tomatoes, cut into wedges
- 1 medium onion, sliced and separated into rings
- 1 teaspoon sea salt (or to taste)
- 1 teaspoon pepper (or to taste)
- 1 tablespoon crushed garlic (optional)
- 1 cup water
- 2 teaspoons sea salt
- 1 teaspoon ground black pepper
- ¼ cup olive oil
- ½ cup balsamic vinegar (or to taste)
Directions
Combine all ingredients in a large bowl. Toss well to mix. Refrigerate at least 2 hours before serving. This will make enough to store and use for a few meals!
